Red Snapper with a Mango Salsa

Did Leslie and I enjoy a fancy feast out on the town, you ask? Did we take out a loan to afford such decadence? No on both counts. I am located above the Culinary Arts class, which is quite possibly the finest facility on our campus, where for 20 to 40 dollars per year, students make amazing dishes like this every day, and then get to eat them! They also have their own mac lab at their disposal and one of the coolest teachers on campus. After a meeting I was heading back to my class when I smelled something heavenly. I poked my head in the classroom and they were all working on their macs doing what appeared to be a writeup on their cooking and asked what that beautiful smell was. They said they had made quiesh and gave me some of the leftovers. While I was eating that (it was amazing!) I went to observe the food service class (third and fourth year students.) Here was a group of twelve or thirteen highschool students dressed in their chefs jackets and hats. They were making red snapper with mangos on homemade tortillas. The first bite of the snapper was unremarkable, but when mixed with the mangos and freshly squeezed limes it was very tasty. All in a days work. That's one of the reasons I like teaching: you never know what's going to happen.

We went to a cool French restaurant on Nob Hill on Sunday. It was a great atmosphere and interesting cuisine. Here are some desserts: Creme Brule and Cinnomon Pare Bread Pudding. Delish!

We had an ultrasound today and decided that we don't want to find out, but we did get an envelope with the "results" in a sealed envelope just in case we cave.

I saw this fun idea on Martha Stewart this morning and made one while I was waiting for my dinner to be cooked this evening. I'm debating whether I should leave it the way it is, or do the pretty glitter like on the show... We shall see!

Boulder Thanksgiving

Boulder was great! We had a fun and memorable Thanksgiving feast in a conference room right off the very cozy hotel lobby - complete with Christmas tree and fire place. We later returned there for Tasta Poss, games, and HF football - go Broncos! Me ad Dan had a blast with the kiddos at the pool, while the ladies hung out at the Pearl Street Mall. I think Dan and I broke the "longest time at the pool" record. All in all a great time and our little niece is enough to bring tears to your eyes.

Catchin' up

So I'm sitting in the back seat of the truck speeding up to Boulder to meet my new niece. I can't believe she's been alive since October 29th and I have never met her!
A lot's happened since then. Trying to keep my head above water at work. In fact, I've done a far bit of grading on the road today, but there's only so much you can do in a day, so I decided to catch up on telling of my trip that helped me get so behind in the first place: a business trip to San Fran. Here are a few pics from last week. It was a great trip and very motivating. We got to visit with folks at Stanford (most beauitful campus ever!) and observe a very proactive highschool in san Mateo. So here's some pics while we wait to get to Boulder and meet the baby...
The sideways pic of the tile walk show a tile for every year in the school. The first one read 87...as in 1887. They also had a Rodin sculpture garden and one of my favorite cathedrals in the world.

October!

I have to hurry up and blog this before October's over. Thank goodness I have that extra hour! It's been a fun month and a not so fun month. My school lost a teacher and a student in the same week, so it's been very tragic. On the other hand, we are blessed to celebrate milestones with friends, reconnect with our Wyoming clan, camp and fish, hike the La Luz, enjoy a snow storm from my new classroom window, announce our pregnancy, and welcome our niece into the world! What a month, indeed!

Last night Leslie, Jenn, Elisa, and I went to the Grecian Festival for the first time. We've wanted to go for years and we finally had our chance last night. It was everything we dreamed of. The gyros and patates and tsatsiki and everything was so delicious.

Headed home

Before we headed home today, we took turns throwing the Dora the Explora basketball that Cory won for me at the Coconino County Fair. Whoever had the ball had to say their favorite memory. Then we went to Starbies and shared one last latte before we parted company. The perfect end to the perfect suprise birthday trip.

Yesterday evening

After our refreshing nap, we freshened up and had a night on the town. We went to a local art fair and then spent some time at the county fair. Sarah, Cory, and Andy all took turns on the mechanical bull and did real well. Then we played a bunch of games and won some prizes. Sarah and I won some stuffed animals and Cory won Andy a Dora the Explora basketball! We finished the evening off with a wonderful meal at Red Lobster.

We found an awesome place to eat in flagstaff called Mountain Oasis. We've enjoyed walking around down town. We plan on continuing to relax and rest up for a day at the grand canyon tomorrow!

The Birthday Adventure

After the ice cream I took andy to the airport to "meet someone special". There we met my parents with our luggage and we got on a plane headed for Phoenix. There I made andy think we were going to Seattle when Cory and sarah walked out of the gate to meet us. Andy was shocked!

Here they are!!! Aren't they beautiful. Costum made and everything, complete with role out bottoms for easy access to our computer stuff and printer as well as ajustable bookshelves and nitches. We love it! Thanks Brian Lujan- you did an awesome job! We highly recommend his services. We have his number if your needing cabnet work done.

Our first full week of school and we're already missing each other. After a very busy first three days, we decided we need an emergency date, so we head to the Line...the County Line. Talk about hodge podge, that bbq restaraunt is eclectic! We had a great time and the the timing was perfect at the base of the Sandias with the sunset.
